Whether you’re hosting friends, heading to a picnic, or looking for a fresh side dish to pair with grilled burgers, chicken, seafood, or steak, this colorful salad comes together in less than 30 minutes and tastes even better the next day.
Ingredients:
Salad
- 4 ears fresh sweet corn, cooked and kernels removed (about 3 cups)
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, diced
- ½ cucumber, diced
- ¼ cup red onion, finely diced
- ¼ cup fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- ¼ cup crumbled feta cheese (optional)
Honey-Lime Dressing
- 3 tablespoons extra virgin olive oil
- Juice of 1 lime
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper, to taste
Directions
- Cook the corn until tender. Allow it to cool slightly, then carefully cut the kernels from the cob.
- In a large bowl, combine the corn, tomatoes, avocado, cucumber, red onion, basil, parsley, and feta cheese.
- In a small bowl, whisk together the olive oil, lime juice, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad and gently toss until everything is evenly coated.
- Refrigerate for 15 to 30 minutes before serving to allow the flavors to blend.
Tip: For even more flavor, grill the corn instead of boiling it. The lightly charred kernels add a smoky sweetness that pairs beautifully with the fresh vegetables and bright honey-lime dressing.
Make It Your Own
- Add black beans and cilantro for a Southwest-inspired version.
- Mix in crispy bacon for extra crunch.
- Toss in diced bell peppers or zucchini from your summer garden.
- Add grilled shrimp or chicken to turn it into a light meal.

A little history:
Sweet corn has been enjoyed in North America for thousands of years. Originally domesticated in present-day Mexico more than 9,000 years ago, it spread throughout the Americas by Indigenous peoples long before European settlers arrived. Today, the United States is one of the world’s leading producers of sweet corn, and its peak season—July through early September—makes it one of the most beloved ingredients of summer cookouts, county fairs, and backyard picnics.
