caramel cake recipe adventuregirl.comFor the caramel sauce: (optional)

  • 1 1/2 cups granulated sugar
  • 1/2 cup water
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract

For the caramel frosting:

  • 2 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup caramel sauce (reserved from above)
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C)—grease and flour five 9-inch round cake pans.
  2. Whisk together the flour, baking powder, and salt in a medium bowl. Set aside.
  3. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. Be careful not to overmix.
  5. Divide the batter evenly among the prepared cake pans. Smooth the tops with a spatula.
  6. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  7. While the cakes are baking, prepare the caramel sauce. In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, stirring constantly, until the sugar has dissolved and the mixture comes to a boil.
  8. Allow the mixture to simmer without stirring until it turns a deep amber color. Remove from heat and carefully whisk in the heavy cream, followed by the butter and vanilla extract. Set aside to cool.
  9. Once the cakes are done baking, remove them from the oven and let them cool in the pans for 10 minutes. Then transfer the cakes to a wire rack to cool completely.
  10. To make the caramel frosting, cream the softened butter in a large mixing bowl until smooth. Gradually add the powdered sugar, mixing well after each addition. Stir in 1/2 cup of the cooled caramel sauce and the vanilla extract. Beat until light and fluffy.
  11. Place one cake layer on a serving plate and spread generous caramel frosting over the top. Repeat with the remaining layers, spreading caramel frosting between each layer.
  12. Once all the layers are stacked, frost the sides and top of the cake with the remaining caramel frosting.
  13. Drizzle the top of the cake with some additional caramel sauce for decoration, if desired.
  14. Refrigerate the cake for at least 1 hour to allow the frosting to set.
  15. Slice and serve this decadent 5-layer caramel cake to enjoy its rich caramel flavor!

Note: Caramel cake pearls can be hard to find and expensive. Another option would be to use caramel chips in lieu of crispearls.
