We love Bagels! We love flatbread! We love breakfast! So, imagine when we got our hands on this spin on a morning favorite, featured at Villard Restaurant in the historic Villard Mansion at the Lotte New York Palace Hotel!
The restaurant, lead by Chef Oscar Granados, offers New American Breakfast, and boasts locally sourced, farm to table ingredients, inspired by French cafes and European bistros.
This pizza uses a “pastrami style” spiced smoked salmon, crème fraîche in place of cream cheese and a light pizza crust. You can substitute ready made pita bread or flatbread.
A light, summer breakfast “take” on a traditional salmon and toasted bagel.

The Makings:
Prep time: 20 minutes
Pizza dough
1 cup crème fraîche
1oz diced pancetta rendered
2 oz shredded asiago cheese
2 oz caramelized onions
2 whole eggs
2 oz pastrami style smoked salmon
2 breakfast radish sliced
1 cup of frisée salad greens
1 pickled red onions
Let’s Create it!
In a small mixing bowl combine the crème fraîche, caramelized onion, pancetta and asiago cheese together
Spread mixture evenly onto rolled out pizza dough. Enough for a small 12” pie or rustic shaped flatbread
Crack two whole eggs onto the mixture, or lightly scrambled and drizzle throughout
Bake in a preheated oven at 380 degrees for approximately 15 minutes or until pizza crust is baked to your liking.
Remove from oven and garnish evenly with pickled onions, radish slices, salmon and fresh frisée greens
Cut into eight squares and serve

After attending the Culinary Institute of America, Chef Granados embarked on a career now spanning twenty years and having included work in some of the world’s leading hotels and resorts, including The Ritz-Carlton New York, BLT Steak in The Ritz-Carlton San Juan Puerto Rico and the Tonga Room at The Fairmont San Francisco. Now, Chef Granados turns his vision to VILLARD at Lotte New York Palace.
